Risotto with Porcini mushrooms

Preparation time: 30 minutes


  • 360 g. Italian rice
  • 1 dry porcini mushrooms pack of 20 g.
  • Vegetable broth
  • 1 onion
  • Olive oil
  • Salt


Put dry porcini mushrooms in a cup with warm water and let soak for 15 minutes.

Cut an onion and make brown it with a little olive oil. Drain porcini mushrooms, put them on a cutting board, and cut in little pieces. Add mushrooms to the onion and make brown for few minutes.

Add 360 g. of rice and toast the rice a couple of minutes. Start cooking rice by adding vegetable broth little by little while constantly stirring. Also add porcini mushroom water and cook everything for 15 minutes. Add some salt.
